The knock sensor kicks on past 160 because higher temps is when you get knock. Plus even though the stat is 160 doesn't mean tour engine is at 160, me operating temp is around 180-190

I run a 180 during the summer months, and put the 195 back in during the winter. My temp gauge does read cooler with the 180 tstat. I do it because of running the a/c during the summer to try and keep the engine cooler. Vice versa for the winter, the heater blows hot air sooner with the 195 tstat which allows the engine to heat up faster. Not a big deal to swap them, more of a peace of mind thing than anything.
