What's up with thermostat temps?

So gm recommends the 195 thermostat. My question is why does everyone put a colder one in there and are there any benefits for n/a or just supercharged?

Power and heat.

You make alot of heat with power, a cooler thermostat can keep the motor cooler.

95% of us never make enough heat to make it matter, they run better at 190-195 anyway.

If you were hot lapping a car and didnt have a ton of cool down time, a cooler thermostat could help as it would stay open more and allow the radiator to cool it off more.
 
OK that sounds right so I probably wouldn't need a colder thermostat running a lightly modded n/a. Also is 195 just the recommended tstat or the recommended engine temp cause I'm in AZ and when I run a 195 tstat my actual coolant temp gets up to about 220 is that normal?

195º is GM's recommended temp thermostat, it wouldn't really change much even if you switched.

When moving, the coolant will be around 190-200 with airflow through the radiator. If you are in traffic or not moving much, it's normal for temps to rise that high. GM fan settings are 212-214 and 226 for high and low speeds. I wouldnt consider it hot untill you are seeing 235-240, then you are tipping into a danger zone if it got warmer.
