ya know, i thought it look like melon ( not necessarily water melon ) and the part you don't eat lol but never knew you could pickle it.
Hope I don't in trouble for going off topic(!), My Mother used to pickle the rinds at home, it took about 6 months in the basement, in a ~20 gallon ceramic "barrel", and the rinds were submerged in a solution of Vinegar and Sugar....Of course it's much easier to buy it at ShopRite-they have "Reese Candied Melon Rind", and sometimes "Old Southern Belle"
....I grew up in Pennsylvania "Dutch Country", and I believe it's more prevalent there, but you can find all varieties online. Everyone that I have ever Turned On to it has loved it, you can eat it right out of the jar if you like.
