Throttle bounces at idle AND while driving

I have a 2000 GP GT, 3.8. When I am stopped at a stop light, sometimes the RPM's will jump up to 1500, but drop right back down to normal idle. Rarely it will actually drop all the way down to zero. If I don't have a good hold on the brake, the car actually jumps forward. When driving down a flat road, I can take my foot off the gas and the RPMs will jump from 1000 to 1300 psi and keep doing so until I put my foot back on the gas. If accelerating to merge onto the interstate, it seems like the fuel is cut off for just a fraction of a second when I get upwards of 4k RPM. This causes the car to jerk really hard. All these problems don't always happen, but more often then not. My SES light is usually on, but sometimes it will turn off and the car runs great for a while. I unplugged my MAF earlier today and went driving for about 30 minutes, but the RPM was still bouncing from 1000 to 1300 if I took my foot off the gas while driving about 35 mph. I've almost given up. This has been a problem for about 1 year now. Can anybody help? I'll try to get video of it if I can. Thanks!!!

I had autozone check the code a few months back, I don't remember the exact code, but it was something MAF related. I drove the car around earlier doing a few more things and I noticed that it didn't do the erratic idle at stop lights or when accelerating, but it is still jumping up and down if I let off of the gas pedal when driving, typically jumping from about 1000 to 1300 when usually it would drop to just idle (about 800 I believe). But then again, it doesn't always do the RPM jumping so I'll have to keep an eye on it and keep ya'll updated. Anybody else have an idea?
