Temperature is all over

My 2002 Grand Prix GT temp go's up and down. When im on the road its around 185 when I stop at a red light it go's up. Yes I know it will rise when stoped but if i sit for more than 2mins the temp go's to 216 then when I start driveing it go's back down. 216 seems a bit high and it happens whenever I am stoped. I also have a 180 t-stat and CIA is this normal.
 


It will go from 185 to 216 in about 1-2 min sitting still as soon as i start moveing it will go right back down.
 
I would check the engine temp sensor thats mounted in the LIM under the throttle body, I would also check to see if your fans turn on.
 
Havent done one in a while was going to do one this weekend. And my fans turn on. Now near my T-stat houseing there seems to be a build up of oil and coolant on top of the oil i cleaned it off about 4 days ago and now its back any ideas
 


mines like that too when i first start driving it will go up to like 210 then drop back down to 180 and will move up and down a few degrees yesterday it was running a few degrees hot for some reason i was thinking it could be my tstat i have the stock one and i also have a CAI ram air so while i drive i can see why it gets cooler but it is up and down
 
that build up could be the valve cover gaskets. have you changed them at all?

that wouldnt do anything for the temp issue but i'm assuming you guys bled the air and what not? how old is that t-stat? cuz it might be bad even tho its not stock. they're cheap and dont last forever.
