I have two 12's amplified by a 1000w amp, which is weak, and my car vibrates like a lonely 35 year old woman's lonely-friday-nights-tool-of-funtimes

I had x2 12's powered by a 1200rmsw amp. Took it all out and only have the 4ch amp in the GP now. Working on getting x2 10's in a sealed box that I can wire down to 1ohm. also

what kind of amplifier would i need for the interior speakers? probably 4 ch's but what class

It doesn't matter too much as to what class, for a full range amplifier I would get a class a/b.
