I have a 98 grand prix gt 3.8. I have replaced my radiator, radiator cap, thermostat, and flushed and filled with new coolant. My car will still overheat (coolant can be heard boiling) temp goes to 260, but temp light doesnt come on. Does anybody have any ideas??

When did all this replacement happen? Recently? Did you bleed the cooling system after all that? These motors are known to be hard to bleed the air from and will cause high temps due to air pockets in the system.

I just replaced it all recently. Just now I got home after it being at 260, checked under the hood 20 mins later, and my hoses are collapsed

Well, the usual culprit is a bad cap. Barring that I would bleed the cooling system and see what you get. You did bleed the system, right?

I turned the bleeder valve on tthermostat and no air came out just coolant. I also noticed my fans arent working. I changed the fan series relay but that didnt work. Im leaning towards a water pump or possible temperature sensor...??

temp sensor could be bad and not sending the right temp to the pcm so it doesn't know what temp the motor is at and that the fans need to come on.
