01 grand prix with 170000 mi ( not super charged)..coolant light comes on when I start the car and doesn't shut off right away..but when I put it in gear and move forward it will turn off..doesn't do it all of the time..I have replaced the sensor 3 months ago put a ac delco in it...don't know if it is because it's so hot in Az or what

that light only comes on if the coolant is low or the sensor is dirty, being its sorta new, id thing you low on coolant, check it after its sat over night, top off if needed.
 
check the coolant level. Are the Lower Intake Manifold gaskets aluminum or plastic?
The plastic ones are notorious for cracking/splitting and leaking coolant into the engine
 
Definitely sounds like a leaky gasket. My car used to do the same exact thing before I replaced my LIM gaskets and refilled the coolant. Light would shut off after driving and the coolant moving around.
 
Checked for leaks and there is none...coolant tank is full..I check it every morning...had gaskets changed in may of 2014...felpro ones where put on
