You would need the pinouts and it can be very tedious. And you would have a permanent CEL, so if you have a state that requires this to be off then you are dead in the water.
Surprised no one has Megasquirted this car yet. I think Fiero's have done it with their 3800 swaps.
if you matched every single wire and put a two position switch with a bank of relays in there you could easily swap between the two and the car would never be the wiser.
however, it's sounds like a super pain in the ass.
Are you using that as an example of what is possible if you try?
Or are you using that as a solution to the OP's issue? If the latter, Will's method does not work with AC Delco PCMs which is what the OP has.

Couldnt you have both pcm's hooked up to the same harness and switches only on the pins that supply each of the pcm's with power.
That way you can simply switch the power from each pcm.
Just throwing it out there, I dont know anything about the pcm pinout
