Oil Pressure Switch

Hi everyone, this is my first post and I was hoping to get some information. I have a 96 Grand Prix with the 3.1 this has always been a very reliable car, but have already been through replacing intake manifold gaskets twice since we've owned it, recently took it on small trip with interstate speeds, coolant temperatures were normal under 195 degrees until. Pulling in the parking lot at the end of trip and the temp rises to over 220 or so and the oil pressure switch triggers idiot light, it wasn't on solid/steady but flickering, not even an intermediate flash but a flicker. I shut it off let everything cool off and checked fluids, coolant level was good in radiator and overflow tank, oil level perfect level. No milky signs of oil in coolant. I also want add that there was no knocking or ticking from a lack of oil pressure. I want to verify I have good oil pressure but I'm not sure where the oil pressure switch is so I can install a mechanical or electric oil pressure gauge in its place. My big question is the oil pump in the oil pan, I'm wondering if Maybe a pick up tube and screen is plugged. Can someone please help guide me , this is my daily driver aside from my motorcycle and I havnt driven her since problem occured. If it's not getting adequate oil through the engine I'm sure that could explain the higher coolant temperature. Thanks in advance.

Just wanted to update on installing the oil pressure gauge in place of the oil pressure switch, after the car was good and warmed up, and at idle, the pressure was 25 lbs which I would think is good, coolant temperature rose to 212 to 215 and the electric fan kicked on bring back down to 195 or so, I'm wondering if this normal for a 100 degree day.

Yes , I was idleing in the driveway, no air conditioning it hasn't worked in years, so the 2nd fan never comes on ever. I had went around town for few minutes getting car good and warmed up because I had just installed the oil pressure gauge and I wanted to see if the oil pressure switch was just faulty, and I believe it was because I got back and was just idleling in the driveway oil pressure read 25 lbs , but the coolant temp rose to over 210 degrees.
