Does our PCM learn?

I had an 05 Mustang V6 and one of the features was that the PCM adjusted fuel/air/timing according to your driving style throughout the day...meaning if you drive smooth and slow, it would downtune and give you better fuel efficiency...if you hammered it all the time, soon you'd be quicker and quicker until you were roasting rubber, and stuck in the seat.
My question is does the 2002 GTP do anything similiar, cuz as I drive around I notice similiar traits...better gas on the slow days...and when I'm out cruising after a few punches the damn thing will roast some tread, and seems quicker. Could be my imagination, or the engine warming up or something silly, but it seems like it does...anyone know???

The only part i'm positive on is it does adjust over time to what octane your running. It does "learn" some things as well but I can't recall what all is included in it.

Yes it does. There are STFT (Short Term Fuel Trims) and LTFT (Long Term Fuel Trims) which will "learn" over time, however its not really your driving habits as much as it is the fuel you are using. This is why alot of people will reset the fuel trims when they go to the track because they are using 100+ octaine instead of 91 or 93.
