So I've noticed, looking at Crutchfield, that some component systems come with crossovers, and some don't. Is it because the crossovers are built in? Since my GP has separate woofers and tweeters, would I need a component system with crossovers? Because if they're separate, wouldn't there already be crossovers in there? Or is that something I would want to replace when replacing my speakers?

The factories idea of a crossover in most cases is just a capacitor on the tweeter to block out the bass.
If you go after market you would definitely want to use the crossovers that come with the component set. I am assuming the ones you say do not come with crossovers are on the cheap side?
