Probably differential score protection kicking in. Kicks in when you have one wheel spinning and the other sitting still. Keeps your differential in one piece. Might want to learn to light up both wheels if you want to keep doing that. Even better, just stop doing burnouts.
 
You've got to go ahead and load the torque converter. Keep the engine at the converter's full stall speed. As soon as you're ready to go let off the brake and mash the gas 100%. This will bring up the power level fast enough that both should start spinning at the same time. Just mashing it from the get go will increase the chance that one will let go before the other.

In general, you don't want the tires spinning. It's wasted energy. You want to launch right on the threshold to the tires slipping so you're most efficiently using your power. Then once you're moving you can quickly lean into it to apply full power to the ground.

It's more likely that you're hitting the differential protection because torque management is more heavy around shifts and not launching.

I may just know my way around performance cars....

Umm... Okay. This isn't really a performance car. It's a FWD V6 family car.
