2000 3.1 Stalls when I let off the gas

Picked this up last month, cleaned the throttle body which was filthy, put a new MAF and fuel pump/fuel guage sender unit in and is running pretty good. Gets a little rough after it warms up and the tranny gets a little jercky. Think the cat is clogging up. It is not glowing red yet but it is radiating a lot of heat. Getting random cyclinder misfire CODE when really bad.

Here is the stalling issue. If I am tacking over 2000 rpm and rapidly take my foot off the accelerator the rpms will drop to zero and the car stalls. It doesn't happen every time, some times the motor will catch at about 600 rpm and pop back up to idle at 900rpm which is much better after the new MAF. If I let the gas off slowly it doesn't stall. It is like the idle circuit isn't kicking in fast enough to catch the motor before it dies. No error codes on this.

Anybody recognize this?

EGR is good - just checked - I am a little concerned with the crankcase ventilation tube going to the back valve cover. Pulled it off and someone had put some gasket maker stuff in there to get a good seal. Going to pull the IAC - might be a little sluggish.
 
Iac sounds like a good next culprit. Wouldent hurt to get a scantool on it and see if you have anything crazy going on like giant fuel trims or whatnot...... also my favorite test for a clogged cat is to just unbolt the downpipe and go for a drive.... if suddenly everything is ok (although a bit loud) then you know what it is. Also those 3.1s tend to blow fuel pressure regulators all the time.... so pull the vac line to it and let it idle for 10 mins and see if any raw gas comes out. If you get gas in the vac line its toasted.
