1999 GTP temperature issue

HELP! I have a 1999 GTP 3.8 with 119K miles. I changed the temperature sensor and thermostat because the gage was barely reaching the quarter mark and i have never had a car not run in the middle. Now it runs in the middle but goes to the 3/4 mark if I leave it running in park for a while. Fans are not on at that point and i unhooked the sensor both fans run at full speed immediately. Changed the fan relays. Have bleeded the air out of the system for sure. Been fighting this for 2 weeks and I am convinced the gage is lying to me as it has no symptoms of overheating at all. Any thoughts?
 


Bleed the system. You have air in it now.

Secondly...what is normal for the gauge on these cars.... around where yours was sitting IIRC.
 
I have bleed the system about 10 times now including jacking the front end up so the radiator was higher than the engine. Is there a best practice on how to bleed these engines?
 
The bleed screw on the thermostat housing with the rad cap on.


So its running at just under the 210 mark on the gauge?

Or at the first big line above 160?
 
first off the gauge does lie to you they all do use a scanner device to read the actual temp, remember the tstat is 195* (factory) im not sure what your stock fan turn on speeds are though i lowered mine. bleed the air out of the system with the bleeder cap on top of the tstat housing the car can be level all the caps should be on. air in the system does cause it to run hotter then so that could just be your problem (i dont know if you know exactly how to bleed a car but the tstat has to be open and flowing before you can start bleeding)
 
Thanks I am bleeding it correctly with stat open. Seeing no air now at all. Is there a way to get the gage to read correctly? I used a scan tool and it is not overheating. Just read way to close to 260 for me and want to be able to depend on it in case something would go wrong in the cooling system.
