idling problems

ok i picked up a 98 gtp and a couple problems with it..
rough idling if its warmed up, its colder out now as im in canada so it idles better.
also the heat gauge seem to be all over the place, not sure if thats normal for this car..
the guy i got it from bypassed the cat and u bend with straight pipe so i do get a code for that but thats it..

How did you get it certified and e-tested without a cat?

we dont have emissions testing here..
forgot to add the plugs are new, 1st thing i tried

If you coolant temp sensor is all over the place that will screw with how it runs.
