That would take a lot of work and not look good IMO. Besides basically cutting off the roof you'd have to really reinforce the car well so it doesn't fold in half one day on the road.

Somebody did cut the whole roof off once...that poor car.
 
That would take even more work because then you would have to have the glass special made for the pieces that come out. Unless you are a great craftsman and skilled at metal and body work or have a sh!t ton of money it is not worth your time to do this.
 


There's a targa top Grand Prix around here atleast there was idk if he still has it or not ill ask the next time I see his buddy
