I have a 95 grand prix se 3.1. Not sure what is going on. To start of, it has new water pump. Run the car for the first time for the day the temp will climb to 220 maybe a little more, drop down to about 200 210 and when you get on it climb back up to 220 225. the motor doesnt act like its getting hot. Maybe temp senor going haywire. Temp gauge never stays at one temp for long. Any ideas?
 


i had a problem with my 96 3.1L overheating turned out to be intake manifold gasket problem, the radiator fluid was leaking there and needed to be replaced. dunno if its related, something to think about
 
I had the exact same problem as you. I just added new coolant and the problem was solved. I will do a whole flush when I get the time but just try adding like 1/2 a gallon of coolant and 3/8 gallon of water. Don't worry about overfilling it. It will just leak out if it gets too high.
