Recently replaced intake gaskets/tstat now the car is running much hotte, HELP!

SO i can't seem to figure this one out. I recently had my intake gaskets replaced, tstat, and coolant temperature sensor (not b/c they were bad but bc they were right there and might as well be replaced). Anyway, before this, the engine temp would run about 180-185 degrees F. Now, since I've gotten it back, it runs about 185-190 for a bit while driving, then it creeps up toward 210. Once, it sits idling for a bit the temperature creeps up even further past 210 to around 220-230F; but the car never overheats, the fans will come on and kick it back down to a balmy 210F. This is all just really strange to me because the car never ran anywhere near this hot before. Any ideas/suggestions? Coolant level is full, i double checked it. Tstat was replaced with stock.
 


This sounds perfectly normal to me. Gauges are only rough ideas of things, they aren't perfect. Otherwise they'd be digital only. Even then.. how perfect is the sensor etc, how much tolerence is built into the T stat?

Your fans are programmed to come on around 218F with high speed fans coming on around 228F. This explains why you see the temps you do now. As for why you didn't before... not sure.
