Fans come on as soon as the car starts

I have a 2001 pontiac grand prix 3.8 n/a only mod is a WAI i got off ebay, the one day out of the blue starting running very cold about 160-175 consistently before I would be running at around 195-210, I did out some hyper lube in it but I dont think this would cause the fans to always run as long as the car is on I always thought the fans would cut on at 195 but this car's fans come on as soon as you start the car
Anyone ever heard of this happening?
 


Mine did that, it ended up being a stuck open thermostat. Same year, same engine. Also I should note it didn't throw an engine code until about a month or two after it was going on.
 
Stock fan settings are 214º and 226º IIRC.

AC "on" will cause fans to run.

Stuck open thermostat? For why it was running to cool?

Possible sensor and or wire problem maybe?

It's so weird that the engine, in my case, didn't throw a code for a month or so after this same issue happened with me. Needless to say, as everyone here has advised, a) Check defrosters, AC what not to make sure none of 'em are on, then move on to T-Stat and gauge accordingly. Hope you solve it! Get her running warm again!
