Today on my 04 GP I noticed the needle for the temp gauge wasn't moving at all and I can hear the fans always on is the coolant temp sensor no good and how hard is it to change and location for it ?
It's directly below the thermostat, screwed into the LIM.
It's kind of tight but easy enough to get a wrench on it. Don't cheap out on the sensor either, get a new delco sensor if you can because the cheaper store brand sensor are prone to failure but I have seen brand new AC delco sensor be bad right away too.
Just suck some coolant out of the rad to lower the level, then remove the thermostat and suck out the coolant so it doesn't spill everywhere, you'll still lose some. Then refill the LIM when you are done and replace the thermostat, then fill the rad. And if you are lucky you might not even have to bleed the cooling system because you aren't getting air bubbles inside it.
