My GP is going through a gallon of coolant a week. No visible leaks whatsoever. Just overheating obviously when it's out. Very very faint white smoke coming from exhaust I've noticed. Oil is NOT milky. Could this still be a head gasket leak?

It's possible, if it's been over heated one too many times it might be the case.

Normally the intake gaskets go first, though 2007 should have the updated design but that doesn't mean they couldn't fail.

A compression test might point you towards the issue if the head gasket is bad.

Would a compression test tell me a detailed idea of what's going on? Or just general. I just hate to go exploring and spendng money that's not necessary

If a cylinder is much lower on compression than the other it's likely to lead you to the cylinder burning the coolant. Like if you have 5 at 160 psi and then one at 120-130 psi.

You can also pull the spark plugs and see what plug is super clean compared to the others or covered in white film because it's burning coolant.

My 07 is the timing cover gasket, too. And my buddy has an 06 or 07 and just did intake gaskets last year (he was going through oil, though)
