05 gtp running warm

Well pretty much finished building my wrecked 05 gtp. Started driving it Tuesday, but ever since it's been running a tick mark past 210 idling or going down tr road. So I replaced the thermostat to a 180 and still the same. I have bled the coolant but I get no air. It slowly gets up to a little above 210 when driving but never gets any hotter. Also the car doesn't have lower radiator baffle or deflector.

If you are judging the actual running temperature of the engine with dash gauge, you should know that the factory gauge can at times be inaccurate. Even so, 210 is not even boiling, if you hold that temp in all conditions, it is good.
 
Switching to a lower temperature thermostat won't have any effect on running temperature while sitting unless the fans are programmed to come on sooner as well; better off with the stock 195 if it isn't tuned. A 180 only really benefits decently modified engines to lower the KR a bit, but you sacrifice fuel efficiency in exchange for that.

I believe the stock turn on point for the low speed fan setting is right at 210 degrees, so if that's really your temperature it's completely normal. My gauge will get slightly above the very center line when sitting in traffic, go back down, and back up as the fan cycles on and off. Once moving (giving the radiator continuous air flow), it will drop down between the 1/2 mark and the 1/4 mark on the gauge.

As a side note, I got my 05 used a few years back, and while lowering the subframe a few months ago I discovered I didn't have the lower radiator baffle at all. Remnants of a front-end collision no doubt. I bought one and installed it for the hell of it, but in terms of temperature I haven't noticed any difference. I'm just a perfectionist when it comes to things like that.
