With winter that has come to the great white north, I was wondering if replacing the side mirrors on a base 2007 grand prix with heated mirrors I've seen on Rockauto would be simply plug and play? Any feedback would be welcome

I have never seen heated mirrors on a GP. I have owned two GXP's and neither had heated mirrors. I don't think it was ever offered. Would be nice for us folks up north.
Heated mirrors work on a resistance grid setup.
You would need controls, wiring, and the specific glass itself. If they didn't come factory on any cars that generation, it would not be plug&play. Even if it did, the harness and controls would likely not be there, or not be hooked up.
It is doable, but likely not doable easily.
I must apologise to those of you who have replied to this thread. It appears I was looking at the Buick LaCrosse of the same year. My wife has this car.
