Blinking SES Light

I have a 97 GTP. I have a blinking SES light that blinks several times. The code is P0300 (could be wrong) but I know the only code that gets thrown is the Random/Multiple Misfire code. Ive had it scanned and two different places both with the same results. So basically I started from the top to fix that code.
Stuff Ive done:

1. Spark plugs (NGK Irridium)
2. Spark leads
3. Fuel Pressure Regulator (it was seized up)
4. The 1 and 4 Coil Pack (#1 had some rust)

Then one day, on another trip to get codes ran again, smoke starts coming up from the center console. I pulled over, shut off the car, look underneath the car and my catalytic converter was cherry red. Pretty scary having that happen but then I thought to myself, maybe thats it! :D Oh and during this whole time my car has a sever loss of power and getting about nine MPG with the smell of gasoline. Since then Ive replaced the cat and both o2 sensors. Let it run for like three minutes and watched the cat. Smoke comes off the brand new cat and Im still smelling gasoline along with that irritating SES light.

My conclusion is the misfire is so bad that it cant burn the gas (poor MPG and power loss) so it gets dumped out of the exhaust and causing the cat to go bad. I have no idea how to solve the misfire. Ive never worked on the inside of an engine before so detailed information would help me out a lot. Please before I decide to blow this car up.
 


Honestly every place ive looked up info for about iridium plugs told me not to gap them. The tips break pretty easily but i did measure them(without harming them). .60 which is what the last ones were before i changed them and its also what the Chilton book recommends. The reason why I think its engine work is because it had the misfire before it ultimately cpapped out. It ran great. Ill check evap lines and canister bright and early.
 
Try putting a long screwdriver on each injector and putting your ear on the opposite side and listen for the injectors clicking. If its stuck open or is sticking, you won't hear the click at all or not as often....only other way ik of would to be to take the fuel rails off w/ the injectors still attatched, turn on the key and fuel pressure will build, and if one is stuck open/leaking it'll let out the fuel. Never tried it though so you may wanna get some other opinions.
 


Alrighty, I checked some more stuff today. Checked all of my vacuum lines and one boot needed to be replaced. Did that and well nothing changed. Canisters appear to be completely fine. I checked the injectors, also fine. Im taking the car into a friend tomorrow. He has about 25 years experience so I believe im in good hands. Not to mention he just got done working on another 97 grand prix a couple days ago. Ill post back once he fines something but I really appreciate your guys help.
