If there were to be coolant leaking from a lower intake manifold gasket would there be any visible leaking from the car itself and if so where might I see it leaking from? There doesn't seem to be any in the oil at all but would there be any other way to tell?

    Look around the LIM.

Obvious answer, but really, should be fairly noticeable if the LIM is leaking externally. Also, check the coolant elbows, they have a decent rate of failure.

One of the coolant elbows was dripping so I replaced both of them, I also spilled a decent amount of coolant when filling the radiator back up, so I was looking at it today while letting my engine run and theres a small pool of it near the bottom of the car in this hard to explain place and I don't know if it's from the elbow leaking, me spilling the coolant or possibly from somewhere else.

Best thing to do then is to clean all the coolant off, so you are absolutely sure that anything you see if from a current leak.

Hose everything off, dry it (or spray the **** out of everything with brake cleaner)

Then start the car, and watch for leaks. Watch the elbows, LIM edges, around the bottom of the TB, and near the water pump.

Kept a close eye on the water pump and coolant elbows after I changed everything and didn't see anything leaking, will clean everything off and take a closer look around the LIM though thanks for the advice!

Well, you don't want to second guess yourself about a leak, tear it apart, and turn out it was for nothing.

Most part stores now days also sell a dye that you can add to the coolant that glows under uv light.

If you use a glycol based coolant any leaks will show up clearly usesing a white LED torch in a dark place

if you don't already have metal gaskets and elbows you may as well replace them. It's like 100 dollars of parts and a couple hours of time and you eliminate the risk of ruinning the bottom end of the motor which is hundreds of dollars to fix and hours and hours of time

And you get peace of mind. Make sure you get the metal replacements.
