My car has been running hot. And I noticed today that the Radiator Fans wont turn on until the temp. reaches almost 210(the middle hash mark). I'm thinking it's either the Coolant Temp. Sensor or Thermostat, both of which I replaced a few years ago or so. Maybe its something else that's wrong???

212°F is the normal temperature for the fans to turn on.

My car has always run at the 1/4 hash mark(185) once warmed up... never higher.

Well you must have a failed thermostat or a 160/180°F thermostat.

Normal operating temperature is 200°F. The stock thermostat is 195°F. Reaching 210 in warm weather is not abnormal by any means, especially when driving in city traffic.

I'm running a 180°F thermostat without a tune, and my temp is usually 190-195°. It rarely reaches 200, but will with enough traffic. My stock t-stat would run it at around 203 ish normally, and go higher with traffic.
