I've had the error code P0341 Camshaft Position Sensor "A" Circuit (Bank 1 or Single Sensor). I've checked continuity between the Camshaft Position Sensor and the PCM checking pin 7 of this diagram (for the 1999 Grand Prix)

What other probably causes are there? What else should I check?

Probably just needs a new sensor assuming the wire harness to it checks out ok. If you do replace it get an actual Delco one and not some aftermarket one as these cars tend to be picky on sensor brands.

Here is a writeup from Bill that explains how to change it:

To do it..I'll pull the belts
    Undo the 10mm holding it
Find a way to wiggle it out
Stick my finger in the hole and have a buddy rotate the motor super slow using crank bolt not the starter (feeling for cam magnet with said finger)
    Once you feel the magnet..
    Wiggle new sensor in
    Reconnect it

I've already replaced the sensor, I don't think the sensor was ever broken, I've made sure the magnet on the flywheel is still in place.
Would the 3800 series 2 even run without the cam sensor?
I don't have any issues with ignition, stalling, surging, or anything of the sort. My gas mileage seems to be normal at around 20mpg, I'm at a complete loss.

I've replaced the sensor, made sure the magnet was still there, checked continuity, still get the code, timing chain the next reasonable thing to check?

Sometimes the car runs perfectly fine, other times it idles a little rough, on occasion with a sharp acceleration it loses power for a moment before catching up (both in park and while driving), There aren't any excess noises other than a faint clicking.
